Salad, anyone???

Hi sissies and momma :) I wanted to ask y'all for some salad recipes that you've made and really liked. This saturday we're having a ladies night at church and each person is bringing a different type of salad and I have no idea what kind to bring! I figured I can use this as a way to kind of poll you all and hear back several different ideas. Thanks!!!!! Post away! :)

  1. Well I don't have a ton of experience with making macaroni or potato salads, but I think I make some pretty awesome chopped salads. Here are some ideas...

    Cobb salad:
    Chopped romaine/iceberg
    tomatoes
    crumbled bacon
    avocado chunks
    chopped ham/turkey
    sliced hard-boiled egg
    chopped cucumber, peppers, carrots, etc.
    ranch or blue cheese dressing

    Caesar salad:
    chopped romaine
    shredded parmesean cheese
    optional: carrot/onion slices
    croutons
    dressing: mix together 1 Tbsp. dijon mustard, the juice of 1 lemon, a splash of Worcestershire sauce, 1 raw egg yolk, S&P, and enough EVOO to bring it together. mix in some grated parm if you want.

    Mom makes a super yummy broccoli slaw, or you could make a cole slaw too. Or you could even make a fruit salad or a fruit salsa!

  2. OOH! or you could make....

    an egg salad with tons of hard-boiled eggs, mayo, dry mustard and S&P....

    chicken salad, with celery, onions, pecans/walnuts, grape slices, and mayo....

    tuna/salmon salad with mayo and LOTS of Old Bay....

    or a classy salad with some fancy greens, candied walnuts, pear slices, some goat cheese and a balsamic vinaigrette!

    (clearly I just had a massive brain explosion of inspiration)

  3. Well, Sarah had some amazing ideas there, Becca.
    The two fav salads I would suggest also have a little work to put them together (that's the nature of salad, I guess--it takes a long time to make, and a long time to eat!). Anyway, Aunt Chris has made this salad that was popular in the 70's or 80's called a Seven Layer Salad. You could put all kinds of things in it, but it was just each ingredient layered in a pretty clear bowl, then you put the special salad dressing on top. The other one I have had people rave about and that is the Oriental Noodle salad(?) Not really sure about the name, but folks love it. You use Ramen, but you don't boil it. You kind of fry it in lots of butter and when it's crispy, you put it in with broccoli, and mix it up with a yummy sweet and sour dressing. If you're interested, I will look for them. Just let me know.

  4. Ok, I found the recipe for the "Crunchy Chinese Salad". It is amazing and I highly recommend it. It has cabbage, not broccoli, though, sorry.
    here's the recipe:
    1 large head Napa cabbage, chopped
    5 green onions, diced
    1/2 cup butter
    2 packs ramen noodles (discard flavor pack)
    1/2 cup sesame seeds (you can easily omit these--very expensive!)
    1 small pkg. sliced almonds

    Dressing:
    1 cup vegetable oil
    1 teaspoon soy sauce
    1/2 cup white vinegar
    1 cup sugar

    First, mix cabbage and onions in a large bowl and set aside.
    Melt butter in a frying pan over med. heat. Break noodles in small pieces and brown along with sesame seeds and almonds. Cool and drain on paper towels.
    For dressing, mix together all ingredients and microwave to dissolve the sugar. Let cool aobut 20 min. before serving. Dressing can be made a day ahead of time.
    Toss together all salad ingredients and add dressing JUST BEFORE serving. If you mix it ahead of time, the noodles get soggy. It is sooooomuch more betta when theys crunchy! This is NOT a diet food.
